Gruyere & Caramelized Onion Grilled Cheese

If you follow me on Instagram, you’ll see that I recently went all out on a cheeseboard. The problem (not that ‘cheeseboard’ and ‘problem’ should ever be used in the same sentence), is that there is only so much cheese two people can consume in one sitting. So I’ve been trying to incorporate cheese into everything I make, and subsequently feed it to Nish because men don’t get fat. The solution was pretty obvious, gruyere and caramelized onion grilled cheese! There is nothing I love more than fancy grilled cheese and this seemed like the perfect opportunity to exercise my creativity! It turned out so well that I thought I’d share the recipe below.

Ingredients:
Gruyere to your heart’s content
A loaf of good Italian Bread
Rosemary
Butter
Gala Apples
3 Large Sweet Onions (this will allow you to make a healthy serving of caramelized onions)

Directions:
First and foremost you need to caramelize your onions. Coat your pan with olive oil, chop your onions in half and proceed to cut them into angled pieces (this is a good guide). Pop them into the pan and cook on low heat until they are caramelized, adding water when you find they are sticking to your pan. Since I was using sweet onion, I found that I didn’t need sugar, and although I normally use balsamic vinegar at the end, I decided not to this time and it turned out just as delicious.

After your onions are all golden and lovely, chop up a few slices of your loaf. Butter one side of every slice- this will be the side that you toast. Stack your bread with some caramelized onion, gruyere, apple, rosemary, and more gruyere. Top the sandwich with the second slice of bread and throw it on a clean pan on medium heat. Make sure you press down on the sandwich while it’s cooking to help the cheese melt faster and flatten it in general. Flip over after a few minutes once the underside is browned. Slice into two and enjoy (and don’t forget to take pictures to show off how profesh you are in the kitchen)!
