As much as I love to be challenged in the kitchen, I think everyone needs to have a few staple recipes under their belt, the classics, if you will. If I can say one thing confidently, it’s that over the years, I have mastered the brownie. Call it simple all you want, but it’s always a crowd favourite. While I have several different brownie recipes which I love, this by far is the winner. It is ooey gooey chewy which is a very technical way of saying that it is the best fudging brownie you will ever eat. Since my recipe for grilled cheese was so well received, I thought I’d share this recipe as well.
INGREDIENTS
1/2 cup butter
7 oz semi-sweet chocolate
3 tbsp cocoa
1 1/4 cup sugar
3 eggs
1 tbsp vanilla
3/4 cup + 2 tbsp flour
Handful of your favourite nuts (optional)
DIRECTIONS
Preheat oven to 350 degrees farenheit and line a 9×9 inch pan with wax paper.
Melt butter and chocolate in a heavy-bottomed saucepan over very low heat. You could use the double boiler method here but frankly I can’t be bothered.
Once the chocolate and butter have melted, add the cocoa and sugar and stir until combined.
Working very quickly, add eggs one at a time (I can’t stress the ‘very quickly’ part enough, because if your mixture is even slightly warm, your eggs are in danger of cooking). Add your vanilla and stir until combined. Finally, add your flour, and once it’s all mixed together, add in your nuts and throw it onto your pan. I find the secret to the perfect brownie is not over-mixing, which is why I never use a mixer. Also, baking powder is your worst enemy.
Bake for 25 minutes. If you’d like the texture to be a little firmer, go for 30, but I like mine chewy and super fudgey, so 20-25 minutes is perfect!
Enjoy with ice-cream and hide the pan before your friends ask for some.
