Ever since brunch last Saturday, I’ve not been able to get the taste of soft, fluffy, cloud-like pancakes from The County General off my mind. After a week of it occupying my thoughts and dreams (a little disconcerting), I decided to take a stand. Enough was enough. I was going to whip up my own pancakes, and they were going to be completely clean. All the fun, sans guilt.
I try to stay away from flour as much as I can, so discovering the magic of oat flour has completely changed my life. I came up with this recipe after experimenting several times and have never made pancakes with real flour since. Don’t believe me? Scroll down and give it a go!
INGREDIENTS
1 cup oats
1/2 cup milk
1 egg
1 tsp vanilla essence
1/2 tsp baking powder
DIRECTIONS
First and foremost, make your oat flour by grinding up a cup of oats until fine. Add the rest of the ingredients and blend until smooth (I use a magic bullet). Spray your pan with Pam or butter it up and pour out pancake sized puddles of batter. When one side is bubbling, flip it over and repeat (just like you would with normal pancakes).
Top with maple syrup, Nutella, or anything else your heart desires. The world is your oyster!
This really does sound easy to make! Im always on the lookout for anything healthy to make. These look so yummy too!
