Healthy and Satisfying Coconut Lentil Soup

Okay, so I posted an Instagram story of this soup and got an onslaught of recipe requests. Well you know me, ask and you shall receive.

Here’s something you need to know about me: I’m the queen of soups. Legit guys, I may not be great at a lot of things, but if there’s one thing I know how to do, it’s make a mean soup. I’ve made it all: butternut squash, carrot, chicken soup, lentil, you name it. And soup is also one of my favourite things to have, especially during the cooler months.

So now that you know my background with soup, let me tell you about this lentil situation. I’m always looking for easy and healthy meals to whip up. Last week, I had a bunch of ingredients lying around, including a fresh batch of bone broth, and I figured, why not make a lentil soup? This soup is nutritionally loaded and so delicious, I’m so excited for you to try it!

Ingredients

  • 1tbsp coconut oil
  • 1 sweet onion
  • 4-5 cloves garlic
  • 3/4 cup lentil
  • 1 can chickpeas
  • 2 diced tomatoes
  • 1 can full fat coconut milk (I use Cha’s Organics, it’s made without gums and all that nasty shit)
  • 2 cups bone broth (or any kind of broth you have on hand)
  • LOTS of spinach
  • Curry Powder
  • Cumin
  • Himalayan Pink Salt
  • Chilli Powder

Directions

  1. Sautee onions in 1tbsp of coconut oil, add in garlic about 3 mins in, and cook until onions are translucent.
  2. Add spices, lentils, chickpeas, coconut milk and bone broth and cook for 30 minutes until lentil is soft.
  3. Throw in spinach and wait for it to wilt.
  4. Pour yourself a bowl and enjoy!

That’s it! So simple, right? It’s the easiest meal you’ll make and the best part is, once you’ve made it, you’re basically set for the whole week! Do you guys love soup as much as I do?
